Wash the strawberries, drain well and remove the stalks. Chop half of them in a pot, cut the remaining strawberries into pieces and add them. Clean the chili and remove the seeds. Chop the chili finely and mix it with ginger and the strawberries. Mix everything with the jam sugar and bring it to a boil while stirring. Cook the mixture for about 7 minutes. Make the “Gelierprobe”. If the jam has gelled, add the pepper.
Fill the hot jam into jars and seal immediately.
